SPICED ELDERFLOWER AND PEAR COLLINS
This variation on a collins is a creation of bartender Stacey Swenson of Manhattan bar Dante. Stacey calls for warming cognac but this can easily be substituted to gin or vodka for something lighter and brighter. The flavours of elderflower, pear, honey and spices (white pepper, ginger, nutmeg and clove) work wonderfully together.

INGREDIENTS
– 30ml Cognac (1 oz)
– 30ml St~Germain Elderflower Liqueur (1 oz)
– 22.5ml Pear Juice (0.75 oz)
– 22.5ml Lemon Juice (0.75 oz)
– 15ml 4 Spice Honey Syrup (0.5 oz)
– Soda Water

COLLETTI ROYALE
Colletti Royale is a vibrant tequila and citrusy spritz by bartender Julie Reiner, co-owner of the well known cocktail bars Clover Club and Leyenda in New York City.

INGREDIENTS
– 45ml Reposado Tequila (1.5 oz)
– 15ml Cointreau (0.5 oz)
– 15ml St~Germain Elderflower Liqueur (0.5 oz)
– 15ml Blood Orange Juice (0.5 oz)
– 15ml Lime Juice (0.5 oz)
– 2 dashes Orange Bitters
