Miso Soup



Hi everyone 🙂
My name is Denise @bzhealthymama and today we are going to make miso soup the Lebanese way!! I am Lebanese and I like to change things up to match my style 😉
Ingredients:
Onions ( add as much as you like) I did a 1/4 I think
2 carrots ( more or less if you want)
one potato
1-2 sticks of celery
1/2-1 bunch of cilantro
Tofu cut up in cubes
one vegetable bouillon
6 cups of water ( in the video I originally put 5 but I added another cup and still it was NOT enough lol )
1 tbsp miso paste
salt to taste of course.

First heat up any oil of choice, then add the cut up onions, sautee until they are golden. Then add the carrots, potatoes, celery, cilatro ,vegetable bouillon and some salt. Continue sauteeing for few minutes.
Add the water, bring to boil and let it simmer for at least 45 minutes. Half way after simmering, you can add the tofu and let it simmer some more.
Take out a cup of the broth and add 1 tbsp of miso paste, dissolve it in the broth then add the soup. Let it simmer for 3-5 minutes.
Miso is a fermented food that’s why boiling it will kill it and we want it alive 😉
