Peychaud’s Paloma – how looks can be deceiving! Peychaud’s Bitters has a sweet, cherry, clove and nutmeg flavour that can easily overtake a drink in high measurements (such as this).The Peychaud’s Paloma (in these ratios) is a little overpowering. Whilst it looks stunning visually, I would advise lowering the Peychaud’s by 15mL (half an ounce).

INGREDIENTS
– 30mL Tequila (1 oz)
– 60mL Grapefruit Juice (2 oz)
– 15mL Simple Syrup (½ oz)
– 60mL Soda / Seltzer (2 oz)
– 45mL Peychaud’s Bitters (1½ oz)
METHOD
1. Combine the tequila, fresh grapefruit juice and simple syrup to your cocktail shaker
2. Shake with ice
3. Pour the soda / seltzer into your high ball glass with ice
4. Strain the cocktail into your glass
5. Float the Peychaud’s Bitters on top
6. Garnish with a grapefruit slice or twist
