To Make the Mint Syrup:
Place mint leaves, water, and sugar in a small saucepan. Bring to a simmer over medium heat, occasionally stirring until the sugar dissolves.
- Simmer for 1 minute, remove from heat, and steep for 30 minutes.
Pour syrup through a mesh strainer into a sterilized glass jar to remove mint leaves; set aside to cool.
To Make the Mocktail:
In a small jar or bowl, combine Dry London Spirit and butterfly pea flowers and leave to infuse for a few hours or overnight.
- Place the infused London Spirit, lime juice, mint syrup, coconut water, Aquafaba, and ice in a cocktail shaker or mason jar (in that order).
- Shake the mixture vigorously.
- Pour the drink into your preferred glass.
- Garnish and serve!
