When Shannon Tebay Sidle, a bartender at New York’s Death & Co, was looking to create a cocktail that paid homage to the flavors of classic colonial-era cocktails, the High Horse was born.

Add the rum, kirsch, cherry liqueur, sweet vermouth, and bitters into a mixing glass with ice. Stir until well-chilled.
