RECIPE FOR THE STRAWBERRY LIQUOR
2 kg fresh strawberries
1 kg (5 cups) sugar
800 mL (4 cups) vodka or 600 mL alcohol
Choose fresh and organic strawberries with high fragrance
Wash and air-dry the strawberries
Pick out the bruised or crushed strawberries to use for immediate use
Place the “good” strawberries into a large sealable glass jar
(1/3 percent of the jar must remain empty during the fermentation process)
Layer the strawberries with sugar to achieve a homogenous sugar-berry mix without crushing the fruits
Add 12-15 cloves into the jar
Seal the jar and store in a cool and dark place for 5-7 days
Every once in a while, flip the jar to submerge all the strawberries in the sugary juice
This will slow down the browning
INTRODUCING ALCOHOL AND MATURING
Once the strawberries have released their juice and fermented for 5-7 days, add 800 mL of vodka or 600 mL of alcohol into the jar
Seal the jar again, place in a dark storage place and rest for minimum 2 months or 3 months
Continue to flip it once a week
Remember, longer the process, stronger the fragrance!
FILTERING AND STORAGE
Strain the vodka-berry mixture through a fine sieve and several layers of cheesecloth
You will observe that there is still some cloudiness in the liquor
Transfer the liquor into a sealable bottle and rest the liquor bottle in a cool and dark place for a week to let the fine particles settle at the bottom
This will achieve a much brighter colour!
Using this traditional technique, you will achieve a homemade, easy, and delicious liquor with a distinct mature taste
Now, it is ready for serving!
