Baijiu is a Chinese category of spirits that is made in a wide range of different styles using different production methods, many of which are not seen or used outside of China. Here, Derek Sandhaus showcases the history, production and main styles of baijiu. He also demonstrates how an understanding of the broad principles of alcohol production can help to demystify production methods that might at first seem very different to the more-familiar Western traditions of fermentation and distillation.
