New Kitchen Toy… A KBBQ Grill

For years I saw these grill pans in various movies and K-Dramas. I finally got to see the real deal restaurant versions when I visited Seoul in 2018 & again in 2019. I am very pleased to finally have one of these in my home.

The meat marinade is a play off of the basic Korean Galbi recipes. This one I adapted mostly from SeonKyoungLongest’s recipe – link below. You can fudge the ratios to suit your taste. It’s hard to mess this marinade up. There’s a reason it is considered one of the best meat marinades ever. You can use whatever protein you have but I like it with beef or pork. Remember the kiwi/pineapple will be softening up the meat so don’t leave it more than 24 hours.

Marinade – (make up 8 -12 hours before you grill)
1 Cup Soy Sauce
1 Cup Brown Sugar – (I used Muscovado sugar which is brown sugar’s less refined, but more flavorful, older brother. But use what you have)
1/4 Cup Rice Wine (I had Soju on hand, imagine that) Mirin will also work
2 – 3 Tbs Toasted Sesame Oil
8 – 10 Cloves of Garlic Minced
1 tsp Black Pepper
1/2 a Kiwi Grated – Pineapple can be substituted but I find fresh works much better than canned. 1/4 Cup if pineapple is used. Kiwi acts the similar to pineapple in tenderizing meat. Enzymes are cool. But kiwis are a lot smaller so less goes to waste.

BTW I couldn’t find Green Onions when I was prepping this but there should be a bunch in the marinade at least 4 to 6 finely chopped.

The marinade can be used a a great sauce for pot stickers or a host of other dishes. It’s good drizzled over rice or thickened with a little corn starch with tofu or whatever protein you prefer. Again a really good basic Korean flavor profile that lends itself to many dishes.
