Koreans have been making takju/makgeolli for thousands of years. It appears mentioned for the first time around 37-19 BCE. Distilling takju/makgeolli began somewhere in the 13th century. This would be concurrent with distillation of baijiu(lots of similarities) in China, and much earlier than distillation of shochu in Japan.
Traditionally the stills were made of clay, and a few craft distillers have returned to this traditional apparatus. Pot stills are common as are column stills, though if the latter are used in craft soju production, few plates will be employed so as not to strip all the wonderful smells and tastes.
Maturation is done in semi porous clay pots, providing a slow breaking down of certain compounds and a little oxidation.
What’s in the green bottled stuff like Jinro and Chum Churum? Grain neutral spirits, one percent of actual traditional soju, flavourings, sugar, stabilizers and preservatives. The flavour is nothing like the real traditional soju whose production was halted in 1965 until 1999 due to rice shortages and laws against using rice in brewing or distillation.
