Sciroppo Morello Cherry Syrup

Amarene, or sour cherries, are known here as the dark red Morello cherry. The syrup is created by pitting and draining the fruit overnight. The resulting juice is blended with sugar and reduced until thick. Once cooled, the pulp is mixed in with a special blend of spices, including carob bean, lemon rind, almond oil, and cinnamon.
